Harriet,
This may be not all that much help, but you ought to consult the state
agricultural censuses for 1850 and 1860 for a picture of what each farm
in that area was producing.

Do keep me advised of your plans as the local branch of the APVA here in
Rockbridge might well want to attend your festivities.
