Being an old farm boy I think they were referring to a farming pratice, such as hilling rows of corn or potatoes, that is mounding earth up around the plants.

Doing some research and came across a line stating , "the hillers and farmers brought their products ". . .
cannot find what a hiller is. does anyone know?
