Subsistence farming is where you produce enough to stay alive with very little left over for other purchases, although it would seem that it would be about impossible to be ENTIRELY self-sufficient on a small farm in the 19th century.

Market farming is where the excess over basic needs is sold in order to buy whatever is needed or within economic range.

Does anyone know of studies of the US Census Agricultural Schedules that attempt to use statistics to show where the ranges lie?
