I recall a story that Willaim Byrd II of Westover wrote down in his
family bible -- where most folks write down births and deaths and such
-- the process for smoking a ham.  He must have liked his ham!

All this discussion of ham is great -- I turned my New England born wife
into an (almost) southerner with one ham biscuit long ago.
