I would think that the only useful answers to this question are those devised for particular regions, periods, and crop "regimes." With reference to tobacco in the colonial Chesapeake, relevant information appears in the work of Carville Earle, Lorena S. Walsh, Allan Kulikoff, Russell Menard, Lois Green Carr, and P. M. G. Harris (Walsh, in particular).
